Recording studio, mainly tracking bands, some voiceover work, some location stuff for choirs, symphony, etc. I don't have a great sounding live room, so for me, a lot of the high-end Neumann mics (U47, U87, TLM103) are too sensitive
If budget was not a factor:
AKG C414- Great all-around condenser, use of multiple polar patterns for room mics, overheads, voice, etc.
Neumann KM84 (stereo pair)- overheads, acoustic solo instruments
Electro Voice RE20- Kick drum, bass cabs, vocals, floor toms, etc.
Shure SM-57- Toms, Snare, Guitar cabs, Kick (beater side for attack), vocals,
Sennheiser MD-421- Toms, Bass cabs, guitar cabs, vocals, brass, saxophone

I would have put a Royer R-121 on here, but I have no personal experience with one. Just know from recordings I have heard from friends

Rode NT-5 (stereo pair)
Electro Voice RE20
Shure SM-57
CAD Trion 7000

The studio where I do occasional work has a small but practical selection of mics, which cover pretty much all bases:

AKG D112 (pair)
Shure SM57/58
Shure SM81 (pair)
Sennheiser MD421 (x4)
Rode NT2 (pair)
Beyer Dynamic M201 (pair)
Neumann TLM193

I often take in my own Sennheiser e604's in case the drum kit is tight for space and an MD421 is too big. There's little, if anything I would add to that selection, as the rooms are not gold-star quality, so anything boutique would be wasted. I would like to get a pair of Cascade Fatheads to use there though.

I'm in the process of upgrading my mic collection from bottom rung stuff - so far I've got [as of today] 3 out of my selection of mics purchased:

1. SM58 -> nice on my partner's voice, but sometimes I get a raspy thing going myself
2. D112 -> low freq stuff - I sang into it for laughs today, and man, is it deep!
3. Rode NT2-a -> smooth - just like Blue bear has said - those highs are in no way over bright or harsh
4. Rode NT5's (on my wish list, as I don't think I'll be able to afford a pair of SM81's for a long long time)
5. SM57's or Audix i5's perhaps or maybe even Sennheiser e609's?

very much the noob in gear acquisition, but gradually improving things where I can.
Edit:
Well, I got pulsar II's from m audio for my sdc selection which I love. They reveal lots of detail and aren't at all harsh through a good pre. I went for a sennheiser e606 for guitar and snare recording. It really rocks and gives me another option besides the sm58 for some sources.
